story: this salad is named after Cesare Cardini who invented the dish in the 1920ies. The quick version proposed in this case differs from its original due to the lack of anchovies and egg yolk, however, the taste is surprisingly similar and intense.

Ingredients for 4 persons:

  •  2 heads of romaine lettuce
  •  2 tsp of Dijon mustard
  • 1 lemon
  • 100g of mayo
  • 1 clove of garlic
  • 50ml of olive oil

 

directions:

  • cut the bread into little cubes and roast them in some olive oil
  •  put all other ingredients into a glass with a srew cap, large enough to shake
  • the garlic should be pressed
  •  close the screw cap and shake well
  • cut the lettuce and mix it with the dressing
  •  serve with croutons

 

tips:

  • shave some Parmesan cheese over the salad
  • a tablespoon of Worchestershire sauce gives an additional kick
  • substitute the mayo with fresh egg yolk
  • serve with sliced chicken breast, prawns, or bacon
